Oat Waffles

dairy-free & yeast-free

Makes 10 medium waffles

3 cups (750 ml) raw rolled oats
½ tsp (2 ml) unrefined salt
3 cups (750 ml) cold purified water
½ tsp (2 ml) pure vanilla extract
1 tbsp (15 ml) honey
¾ cup (200 ml) raw cashew nuts

Method

1.Blend all the ingredients together in a power blender or liquidiser, until smooth.
2.Let it stand for 10 to 20 minutes until the mixture has thickened.
3.Pour the mixture onto a heated waffle iron and bake for 10 to 12 minutes until golden brown and no more steam escapes.
4.The waffle iron will open easily when cooked.


Serving

Serve with raw honey and cinnamon, or genuine maple syrup. Delicious served with strawberries and cream; fresh mixed berries, fruit or berry compote with home-made honey ice-cream or whipped cream.
