Wholesome Veggie Fritters
dairy-free; gluten-free (optional); sugar-free & yeast-free
2 medium sweet potatoes, boiled and mashed
½ cup (125 ml) millet or oats, cooked
¼ peeled butternut or 3 small carrots, grated
2 to 3 large free-range eggs
fresh corn cut off 1 cob
½ cup (125 ml) peas, boiled
1 red onion or 3 spring onions, finely diced
1 cup (250 ml) oat or rice bran
big handful fresh mint, chopped
big handful fresh basil, chopped
1 tsp (5 ml) ground coriander
2 tsp (10 ml) herbal salt
pinch of cayenne pepper
coconut oil for frying


1.Place all ingredients in a bowl and mix well.
2.Heat the oil in a nonstick pan.
3.Take tablespoons full of the mix and form into patties in the pan. Fry on each side till golden and set in the centre.

Instead of oat bran use psyllium husk or ¾ cup (200 ml) chickpea flour
