Protein Pancakes

dairy-free; gluten-free; sugar-free & yeast-free

A nice weekend breakfast

Ingredients:


3 egg whites or 2 eggs
1 cup almond meal

1 TBS ground flaxseeds
1/4 banana, mashed
small handful shredded coconut
1/2 cup berries (for topping)
1 TBS psyllium husk
1 tsp vanilla extract
1 tsp ground cinnamon
1 tsp stevia powder/ 3-4 drops stevia  liquid
2-3 TBS almond milk
1/2 tsp baking powder

Method:


In a mixing bowl, whisk 2 eggs or 3 egg whites.

Blend the remaining ingredients (except berries), and stir into the eggs.

Melt coconut oil in a large pan over medium heat
Ladle in one-third of the mixture and cook each side for 2-3 mins, or until lightly golden.
Repeat with the rest of the mixture.

Top with a drizzle of honey and berries
