Chia Breakfast Pudding

dairy-free; gluten-free; sugar-free & yeast-free

Chia Breakfast Pudding:

This is a delicious breakfast or dessert that is filled with fibre and omega 3 fats.

Serves 1

Ingredients:

1/4 cup chia seeds

1/2 cup almond milk or coconut milk

1/2 cup water

1 tsp desiccated coconut, tsp vanilla extract (optional)

A few drops of stevia (optional)

Method:

Soak chia seeds in almond milk/water  & vanilla extract overnight until set – chia seeds will become gel-like.

Once set, top with berries, shredded coconut, nuts and cinnamon.
